Creative with leftovers
I had a very ripe mango, a very ripe avocado and a tiny bit of butter lettuce.
Beautiful food I did not want to waste.
So I scooped out the avocado and placed it inside the butter lettuce
Filled it with mango, herbs from the garden, and a splash of lemon!
Perfect solution for a nice light summer weekend brunch ... yum
